Cocoa Oatmeal Coconut Cookies

These are my sweet Aunt Teresa's 'no-bake' cookies. I remember her fondly, especially at Christmas time. She always made these cookies. They are easy to make and require no baking. How special is that?! Filled with oats, coconut vanilla and delicious cocoa, these are a delicious addition to your Holiday cookie list.





Prepare a large baking sheet with waxed paper


Ingredients:


2 Cups of sugar

1/2 Cup Cocoa

1/2 Cup Whole Milk

1/2 Cup Butter

1 Teaspoon Vanilla

3 Cups Quick Rolled Oats

1 Cup Coconut, unsweetened


Method:


In a large saucepan, mix together sugar, cocoa, milk and butter

Bring to a boil, and boil for 1 minute

Turn off heat, and remove pan

Add vanilla, then rolled oats and coconut


Keep stirring until it is well blended


Spoon by tablespoons onto the waxed paper

Cool at room temperature


Store in an airtight container in the fridge for up to 3 days


These are a delicious treat any time of year!
