Guacamole

The glory for this recipe goes to my son who makes fabulous 'Guac'. The magic ingredient for a great guacamole is cumin. Toast the ground cumin in a dry frying pan on medium heat until you smell the beautiful cumin.


Guacamole is great with tortilla chips but it is also delicious with fresh veggies, on a burger or a roll-up, on toast, or oven fries.






Ingredients:


3 Ripe avocados

1/2 Cup of Spanish onion or red onion, finely chopped

1 Roma tomato, seeded and finely chopped *optional

1/2 Jalapeno pepper, finely chopped

1/4 Cup cilantro, finely chopped

2 Tablespoons fresh lime juice

1 Teaspoon Maldon salt or sea salt

1 Teaspoon ground cumin, toasted*


Method:


Peel and mash avocados.

Add tomatoes, pepper, cilantro, lime juice, salt and cumin.


Enjoy!


Toasted cumin


In a dry frying pan, heat on medium heat until hot. Add cumin and shake the pan over the heat until you start to smell the cumin. Remove from heat and cool. That's it.


A beautiful serving idea


If you like to grow nasturtiums in your garden like I do, you will know that the flowers aren't just pretty. They are delicious and nutritious. The leaves and petals contain vitamin C and iron. The leaves also have antibiotic properties.

Stuffed Nasturtium Flowers with Guacamole


12 Nasturtium Flowers, any colour, rinse and let dry

Guacamole

Fresh pita bread, cut into triangles, just big enough to hold the flower


Pipe guacamole into nasturtium flower and place on pita triangle.


Place these appetizers on a large beautiful platter to show off the colour!
