This is a perfect dressing for kale salad or grilled veggies such as eggplant. Very easy to put together and keeps up to 5 days in the fridge.
Ingredients:
1/4 Cup good quality Olive Oil
2 Tablespoons freshly squeezed Lemon Juice
1 1/2 Tablespoons of White Wine Vinegar
1 1/2 Teaspoons Dijon Mustard
1 Teaspoon Honey
1 Clove of Garlic
1/4 Teaspoon Greek Oregano
Sea Salt and Freshly ground Pepper to taste
A Pinch of Saffron
Method:
Mix all ingredients except the Saffron in a blender or food processor until blended, or use a whisk and blend it by hand in a medium bowl, but smash the garlic clove first.
Season to your taste. Pour into container and add the pinch of Saffron. Give it a swirl on top for a luxurious twist.
